Penicillin Cocktail, Blended Scotch, Ginger, and Honey

Sour cocktails are one of my favorite cocktails, and the Penicillin cocktail doesn’t disappoint! It offers a great combination of flavors in a refreshing drink that can be enjoyed year around.

The most significant difference I make is that I use two different syrups instead of just a honey ginger syrup. I do this because I use ginger and honey syrup in other cocktails separately at the bar I work at.

This is a refreshing Scotch cocktail that offers some great flavors.

Equipment

Ingredients

  • 2 ounces 2 Blended Scotch

  • .75 ounce .75 Fresh Lemon Juice

  • .5 ounce .5 Ginger Syrup

  • .5 ounce .5 Honey Syrup

  • .25 ounce .25 Single Malt Scotch

Directions

  • Combine blended Scotch, ginger, honey, and lemon juice into a shaking tin
  • Add ice
  • Shake for 12 - 15 seconds
  • Strain over a large ice cube in a double rocks glass
  • Float the Single Malt Scotch on top of the cocktail

Who Created the Penicillin cocktail?

Australian Sam Ross created this modern classic cocktail around 2005 while working at Milk & Honey.

He took the Gold Rush cocktail, used a blended Scotch instead of bourbon, and added ginger juice to the recipe.

Then, he added a float of single malt scotch whisky to give the cocktail some smokey characteristics.

Sam Ross is also known for creating the Paper Plane, a riff on the classic cocktail The Last Word.
